The Basics

Making Cupcakes is easy and fun.  We all remember our mothers making Fairy Buns, as we called them in the good old days! And now it’s our turn to give our little ones those same memories!

We will start off with the basic cupcake mix and then progress to add lovely flavours and tasty combinations and toppings so that you will be able to make fabulous cupcakes for any family occasion.

The tools of the trade can be found in almost every kitchen and for that special present can be bought in our online shop.

You will need:

1 medium sized mixing bowl
1 electric whisk or if you want to be truly old-fashioned - 1 wooden spoon!
1 weighing scales
1 cupcake tin (holds 12 cupcakes) or
12 silicone cupcake cases
12 paper cases (if not using silicone)
1 spatula

The basic Cupcake

Ingredients:

  • 6 oz self-raising flour
  • A pinch of salt
  • 4 oz soft butter or margarine
  • 4 oz caster sugar
  • 2 eggs
  • 1 1/2 teaspoon vanilla extract
  • 2 dessertspoons milk

Makes: 12 standard cupcakes.

Method:-
Preheat the oven to gas mark 5, 350F (180C). Put your paper cases into a cupcake tin or, if using silicone cups, place on a flat baking tray.  Place all your ingredients into your mixing bowl (remember to sift the flour) and whisk or beat until thoroughly mixed.  Remember to scrape around your bowl with the spatula to make sure all the ingredients get mixed properly.  Pour the mixture into the individual cupcake cases and bake in the oven for 20-25 minutes or until a skewer inserted comes out clean. Cool for 10 minutes in pan on rack; remove and cool completely before decorating.
